Authentic Mexican Rice

Ingredients

  • 1 cup long grain rice

  • 2 1/2 cups hot water

  • 1/8 cup vegetable oil

  • 1 1/2 tbsp tomato bouillon

  • 8 oz can tomato sauce

  • 6 stems cilantro, chopped

  • 1/2 tsp salt

  • 1 tsp garlic

  • 1/4 tsp cumin

  • 1/2 tsp garlic powder

  • 1 small onion, diced

Instructions

  1. Heat oil in frying pan over medium heat.

  2. Meanwhile, add tomato bouillon to the hot water and stir until dissolved.

  3. Add rice and onion to oil and fry until rice is brown and onions are soft.

  4. Add water, tomato sauce, salt, garlic, cumin, cilantro, and garlic powder to the rice.

  5. Stir and cover pan. Simmer for 30-40 minutes or until no water is left. Fluff with a fork and serve. Enjoy!
