Oven-Baked Egg Bites

Ingredients


  • 8 eggs, large

  • 1/2 cup heavy cream

  • 1/4 tsp salt

  • 1/8 tsp black pepper

  • 3 green onions, chopped

  • 1/4 cup spinach, chopped

  • 1/2 cup ground sausage, cooked

  • 1/2 cup bacon, cooked and chopped

  • 3/4 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Spray cooking spray onto your muffin cups (I HIGHLY recommend silicone muffin cups, it is MUCH easier to get the egg bites out when they are done and so much easier to clean!). If using silicone muffin cups, make sure to place them on top of a sturdy cooking sheet.

  2. Grab the green onions, spinach ground sausage, bacon, and cheddar cheese and distibute them evenly among all the muffin cups. You want your muffin cups to be nearly full with all of the mix-ins.

  3. Add the eggs, heavy cream, salt, and pepper to a medium mixing bowl and whisk for 2 minutes. Don't overmix the egg mixture. If it becomes foamy, the egg bites won't cook evenly.

  4. Pour the egg mixture into the muffin cups. I like to pour my egg mixture into a glass liquid measuring cup because it has a nice spout which makes it easier and cleaner to pour the eggs into the muffin cups.

  5. Place the muffin cups into the preheated oven and bake for 18-20 minutes. They should be set and firm. The egg bites may expand quite a bit in the oven but they will shrink back down as they cool.

  6. Serve warm and enjoy!



TIPS:


  • One of my favorite things about this recipe is how easy it is to switch up the mix-ins! This is the perfect recipe to clean out my fridge of anything that goes well with eggs, such as mushrooms, bell peppers, ham, sausage, bacon, the random small chunk of leftover gruyere cheese, etc.

  • These egg bites are great for breakfast meal prep! They reheat well, just pop two egg bites onto a plate in the microwave for 45 seconds and you have a quick and healthy breakfast!
