Shrimp Fettuccine in Roasted Red Pepper Sauce

Ingredients

  • 8 oz. fettuccine pasta

  • 1 lb large raw shrimp, peeled and deveined

  • 16 oz. jar roasted red bell peppers undrained

  • 3 Tbsp butter

  • 3 garlic cloves minced

  • 1/2 Tbsp paprika

  • 1/8 - 1/4 tsp of red pepper flakes

  • 3/4 cup half and half

  • 1/2 cup grated parmesan cheese

  • optional parsley for garnish

  • salt to taste



Instructions

  1. Bring a large pot of water to a boil. Cook fettuccine until al dente. Drain and set aside.

  2. Place the roasted bell peppers into a food processor or blender and blend until smooth.

  3. In a large pan on medium-high heat, add butter, shrimp, paprika, and red pepper flakes. Cook for 3-4 minutes. Add garlic then cook until shrimp is done. Remove shrimp.

  4. Add the blended roasted red pepper and cook until reduced on low heat. Make sure to stir often.

  5. Add half and half and parmesan and cook until parmesan is melted. Add salt to taste. Return the shrimp to the pan and add fettuccine. Toss to coat everything in the sauce and garnish with chopped parsley and more grated parmesan cheese if desired.
