Creamy Vodka Sauce Pasta

Ingredients

  • 16 oz. penne pasta

  • 1 Tbsp olive oil

  • 1 small onion diced

  • 4 gloves garlic minced

  • 1/2 cup vodka

  • 1 15 oz can tomato sauce

  • 1 15 oz can diced tomatoes drained

  • 1 cup heavy cream

  • salt and pepper to taste

  • 1/2 cup freshly grated parmesan cheese

  • fresh chopped basil for topping

Instructions

  1. Cook the pasta until al dente and drain. Set aside.

  2. In a large cast iron skillet, add the olive oil, onion, and garlic on medium-high heat. Saute until onions are soft. Add the vodka and turn heat down to medium-low. Simmer until reduced.

  3. Add in the tomato sauce, diced tomatoes, and heavy cream. Simmer until thickened. Add the pasta to the sauce and stir to coat it in the sauce. Add salt and pepper to taste. Top with the freshly grated parmesan cheese and basil. Enjoy!
